INSTRUCTIONS
Preheat the oven to 350F or 180C and line a 9 by 11 baking tray with parchment paper.
Add the butter and sugar in a mixing bowl. Beat them using a handheld mixer until it turns light and creamy.
Add the vanilla essence and flour into this creamed mixture and mix everything.Knead to a soft dough. Do not add water or milk if it gets crumby. You can add more butter and try to pull everything together into a dough. Cover and freeze it for about 18-20 minutes.
Once the dough is properly chilled, roll it out over a silicone mat to about 1/2 inch thickness.Use a 2 or 3 inches sized circular shaped cookie cutter and cut out your cookies.Pick up the cookies with a sharp knife or an offset spatula and place them in the baking tray.Bake your cookies for 3-14 minutes or until it starts to turn golden brown from the edges
Once your cookies have been baked cool them down and then drizzle caramel sauce over it.If you do not have caramel sauce, melt about 10 ounces of Caramel with Evaporated milk, and then top the cookies with it.Chill the cookies for 10 minutes.After 10 minutes, drizzle chocolate sauce over the cookies.If you do not have chocolate sauce, melt 1/2 cup unsweetened chocolate chip with milk in the oven.Chill the cookies for 10 minutes and then enjoy!

Notes
If you do not have caramel sauce, then melt caramel in the oven or stove with some evaporated milk. Keep stirring until it thickens and then do the topping with it.
If you do not have Chocolate sauce or syrup at home, then just melt some dark chocolate chips or a dark chocolate brick with some milk in the oven or stove and do the topping with it.
