First, wash the Quinoa and dry roast it for 1-2 minutes. Add 1 cup water to it and cover cook it for 10-12 minutes. If it gets dry in the midway, add in another cup of water and cook until all the water gets soaked. After 12 minutes, fluff the Quinoa and use it for the salad.
In a salad bowl add the Quinoa followed by the veggies - Garlic, Bell Pepper, Onions, Tomatoes, Cucumber, Jalapenos. Also, add the Black Bean and Corn and mix well.
Make the Lemon Vinaigrette Dressing by combining all the ingredients in a bowl or mason jar. Thin it out with water and drizzle over your salad.
You can top your salad with some freshly chopped Cilantro as well.

You can use other veggies such as Avocado or Cilantro or Chives in this.
The dressing can be altered as per your taste. If you want it spicier, then you can add more of Cayenne pepper. If you want it sweet you can add more honey.
