Beat the butter until light and fluffy for 5 minutes at low speed in a stand mixer or using a hand held mixer. Scrape the sides, get everything sticking to the edges to the middle of the bowl and beat well until the butter gets fluffy
Sift the icing sugar and add it in parts. Beat over low speed until combined through.
Add the Lemon Zest, Lemon Juice & Yellow Gel Food Color and Beat well until light, creamy and fluffy. Beat over low speed for 1-2 minutes or just until combined, and there are stiff peaks.
