Heat a pan with some Avocado oil. Add in sausages and onions. Sauté for 8-minutes over medium-high heat or until the sausages are fully cooked through and the onions are lightly browned.
Add peppers and sauté for another 2-3 minutes.
Add in cooked leftover rice and stir well. See notes if you are using uncooked/instant rice.
Season with Salt, Pepper, and Cajun Seasoning. you can also use garlic salt for more flavor.
Stir in hot sauce. Cook lightly for 3-4 minutes on medium-low heat.
Serve hot. garnish with fresh italian flat-leaf parsley (if desired)

Notes
If using 2 cups of instant rice then use 2 cups of low-sodium chicken broth as well. Once you add the rice and chicken broth, cover the lid and cook for another 5-8 minutes or until the rice is fully cooked through.
