INSTRUCTIONS
Rinse the Cashews in water. Soak them in warm water for 30 min. Cover and set aside.
Now, drain and set aside. Use a food processor or a high speed blender. Add the soaked Cashews in it along with Dijon mustard, Salt, Monk fruit Sweetener, Turmeric powder and freshly ground black pepper.
Blend everything until it forms a coarse mixture. Then pause and add lemon juice. Now slow down the speed of your blender and start pouring Sunflower Oil slowly into the mix. You want the oil to be thoroughly mixed in with everything and not be separated out.
Lastly, add a few teaspoons of water to make the mixture blend in a smooth consistency. Finish blending when the sauce is thick and smooth throughout.
Your Vegan Mayonnaise is now ready! Store it away carefully for future use.
