Easy Shrimp Appetizer recipe: Shrimp Cucumber Avocado Bites are cute and easy appetizer bites. These are so easy and healthy appetizer for party to feed the crowd.
1tablespoonAvocado Oilor any other non flavoring oil
2medium sizedCucumberspeeled and chopped to 1" dices

INSTRUCTIONS
Heat a medium sized Skillet over medium high heat. Drizzle Avocado Oil in it. As the oil shimmers, add the Shrimps. Sprinkle the Taco Seasoning over the Shrimps. Toss to combine everything. Arrange the Shrimps in a single layer in the skillet and cook them for 3 minutes. After that, toss and cook the other side for 2 more minutes. Once cooked, remove from the skillet and keep aside.
Cut the Avocado in half. Remove the seed using the edge of your knife. Now, scoop out the Pulp in a large mixing bowl. Squeeze Lime Juice and throw in the freshly chopped Cilantro. Give it all a good mix using two forks. Mix until the mixture gets creamy.
Peel and chop the Cucumber into 1" dices. Top the Avocado Mash over the Cucumber. Top with the Shrimps and serve.

TIPS
Season the Shrimps generously with an seasoning of your choice.
Do not overcook the Shrimp
Shrimps should take just 2-3 minutes, each side to get cooked.
Make sure you are using fresh Avocado and Cucumber
Cut the Cucumber into 1" dices.
You can use store bought or homemade Guacamole as well to top over the Cucumbers.
Chop the Avocado, remove the seed, and scoop it out.
Mash the Avocado along with chopped Cilantro and Lime Juice, using two forks.
