Remove the Roast 3 hours prior to cooking and allow it to come come down to room temperature. Rub salt all over the roast and wrap it loosely with butcher paper. After this, just let the salted prime rib roast rest at normal room temperature.Remember, your goal here is to get the prime rib roast to room temperature so that it cooks uniformly.
Prime rib roast should already come with kitchen string tied around them, but if yours is not like that then you should do it instead. Remove the bones away from the roast and then with the help of a kitchen string tie them back again. This will help you in carving the prime rib roast after it is done cooking.
Preheat your oven at 500 degrees Fahrenheit, or whatever is the highest temperature setting in your oven and lower the oven rack to the centre. Meanwhile, Pat dry the Prime Rib using a kitchen towels. The salt rubbed on the Prime ribs must have released the moisture which needs to be patted off.
Once that’s done, season the prime ribs once again. Make herb mixture by combining Olive Oil, Thyme, Rosemary, Salt and Pepper in a small mixing bowl. Use this mixture to season the Ribs.
Time to get your Prime Rib roasted! But before that, stick a meat thermometer inside your prime ribs. Make sure you don’t stick it so deep that it touches the bone, as that will mess up the reading. And you need to be very particular about temperature when it comes to making Prime Ribs.
The first step to roasting your Prime Ribs is to brown them. For that, let your Prime Ribs bake in the oven for 15 minutes at the highest temperature. It should be around 500°F. Place the Prime Rib in a cast iron pan or roasting sheet pan.
Now it’s time to get the Prime Rib to cook from the inside. For that lower, the oven’s temperature to about 325°F and let the Prime Rib roast for about 12-15 minutes. If you want to have your prime ribs on the rare side then you can cut the cooking time off early.
Keep a close eye on the thermometer during this process. If the thermometer reaches 120°F that means it is cooked at medium rare and can be taken out of the oven!
Don’t carve up the Prime Rib roast immediately. Instead, let it rest on the kitchen’s countertop for good a 20 minutes. Cover it with foil as well so that it does not dry out. Your prime ribs are now ready to be carved. Remove the kitchen string and bones away and use a sharp knife to slice 1/2 inch thick cuts from the prime rib roast. Now all you need with this prime rib is the gravy!
Take a saucepan and put it on medium heat. Pour all the fat drippings you collected from the roasting pan into the saucepan. Add all-purpose flour and whisk it into the drippings until the flour starts browning. Otherwise, you will taste raw flour in the gravy. Now pour water/milk/broth/beer in this roux you have made in a streaming motion. Stir and whisk constantly as you don’t want the flour to form any lumps. Let the gravy to simmer for a few minutes over medium high heat so that it can thicken.To finish off just season the gravy with kosher salt and freshly ground pepper and Serve
