Preheat your oven to 350F and grease a 9 x 3 x 5 inches baking tray with cooking spray. Line it with parchment paper and keep it aside.
Cream butter and sugar. Add egg, vanilla essence, sour cream, and mashed bananas. Beat well with a stand mixer or hand-mixer.
Sift and add All-Purpose flour, baking soda, baking powder, cocoa powder into the mix and mix well. Add chopped cashews, chopped walnuts and mix well.
Pour it in a baking tray lined with parchment paper and spread it evenly. Tap it on a hard surface. Top it off with some chocolate chips.
Bake for 50 to 55 minutes at 350F preheated oven. Or until a toothpick inserted at the center comes out clean.
Cut it into loaves and serve.
Notes
Your baking time will differ based on the kind of baking tray you are using. I have used a non-stick metallic tray so it took me about 55 minutes. If you are using a ceramic tray then your baking time will be different. Check at regular intervals with a toothpick inserted at the center. It will be done, when it comes out clean.
If you don't have sour cream you can replace it with thick greek yogurt (1 Tablespoon and 1/2 Teaspoon Vinegar)
