Add chickpeas, smashed and peeled cloves of garlic, kosher salt, smoked paprika, sweet paprika, chili powder, roughly chopped chipotles with adobo sauce, ground cumin, freshly ground black pepper, and lime juice. Toss well and cook for 2-3 minutes on medium heat.
Add freshly chopped cilantro and cook for an additional 2 minutes.
To Assemble tacos, spread guacamole on each tortilla. Add chickpea, cotija cheese, fresh homemade coleslaw, and sriracha hot sauce. Serve right away.
