INSTRUCTIONS
First, start by taking the oil and sugar in a bowl and cream it. Creaming means beating the oil and sugar until it's well combined. If you are using Maple Syrup, then you will have to cream your maple sugar with your oil. Use a handheld mixer or stand mixer to cream your oil and sugar. Beat for 3 minutes at medium to high speed.
Next, add the chopped Bananas and mix it well using the handheld mixer or stand mixer
To this add the vanilla essence and mix well.
Now sieve the dry ingredients into the wet ingredients
Add the Buckwheat flour, Rolled Oats, Whole Oats, ground Cinnamon, ground Nutmeg, Egg, Yogurt, Chocolate Chips and Raisins into the wet mixture
Use a wooden spatula or silicon spatula to combine everything well. Do not use a handheld mixer or stand mixer after you've added your dry ingredients. Your Muffin batter has to be lumpy. (not smooth like a cake batter).
Line a muffin tray with oil and place the cupcake liners in it.
Use an Ice cream scoop to scoop out the Muffin batter and place it in the muffin moulds one after other.
Fill each mould till the top so that you have a nice dome shape of your muffins
Finally top it with little bit of dry oats
Bake your Oats Banana Muffins at 428 F for 5 minutes and then again at 328 F for 5 minutes.
Allow the Muffins to stay in the hot oven for an additional 5 minutes before you get them out.
Get them out on a cooling rack and allow them to cool down completely before you get them out of the moulds.
Your Oatmeal Banana Muffins are ready.
