Grease the inside of the Crockpot with Olive Oil. Add Softened Cream Cheese, Grated Parmesan Cheese, Heavy Cream, fresh minced cloves of Garlic, Italian seasoning or oregano, and Water to the pot. Stir to combine everything. Place the Chicken Thigh pieces on it.
Season the Chicken Thigh pieces with salt, pepper, and some more grated Parmesan Cheese. Cover with the lid and slow cook on high for 2 hours or on low for 4 hours.
After it gets cooked, combine 2 tablespoon of Cornstarch with 3 tablespoon of water. Mix until combined and pour over the chicken. Toss to combine. Cover and let sit for 10 min so that it keeps warm and the cornstarch thickens the sauce meanwhile.

Notes
You can make this same recipe in the oven. Just dump everything in a 9x12 inch casserole baking dish and bake covered in a 200C or 400F preheated oven for 15-20 minutes. If you find that the seasoning is less, you can add fresh herbs like a spring of thyme or 1/2 teaspoon of rosemary to enhance the flavors. If you find that the dish is too soupy, you can add a bit of cornstarch slurry (1 tablespoon cornstarch + 2tbsp water) to the cooking mixture. This will thicken the creamy garlic Parmesan sauce making it velvety and even creamy.
