Baja Shrimp Tacos - Juicy, Succulent Shrimps with fragrant garlic, spicy chipotle, and smoky cumin makes for an excellent shrimp taco that is just fabulous. Served with shredded cabbage and chipotle mayo these Baja street shrimp tacos are super-good.
Pat dry the Shrimps with a paper towel. In a large ziplock bag combine shrimps with olive oil, garlic powder, chili powder, cayenne pepper, ground cumin, freshly ground black pepper, and salt. Mix well and allow this to rest for 20-minutes.
In a medium-sized mixing bowl combine mayo, sour cream, lime juice, and finely chopped chipotle chilis in adobo sauce. Mix well and set aside. You will definitely have leftovers of this sauce that you can use with burrito bowls or any Mexican-inspired recipes.
In a large bowl combine Mayonnaise, Shredded Cabbage, Sliced Red Onions, lime juice, and freshly chopped cilantro. Allow this to sit in the refrigerator for 5-10 minutes.
Heat Butter and Olive Oil in a skillet. As the oil shimmers, add the shrimps to the pan and cook for 2-3 minutes or until the shrimps get cooked. Do not overcook the shrimp. Shrimps get cooked very quickly.
Finally, Assemble tacos in corn tortillas or flour tortillas with creamy Mexican Coleslaw at the base, and spicy chipotle mayo and top with the seared Shrimps. Enjoy with some Guacamole and a final squirt of Lime Juice on top. Enjoy!

You can make Coleslaw Mix ahead of time and store it in the refrigerator covered with plastic wrap.You can also make Chipotle Mayo ahead of time and store it in the refrigerator. You can use pre-shredded Coleslaw mix to speed up your work.
