Melt white chocolate with a few drops of coconut oil in the oven. Melt at 30 second burts. Stir until it gets smooth and lump free. In a mixing bowl, beat all the ingredients until they get thick and creamy.
Transfer to an Ice Cream freezing tin. Pack it tightly. Even out the top with an offset spatula or the back of a spoon. Leave some roon on top so that there is room for expansion after the ice cream freezes. Top with white chocolate chips. Cover with a plastic wrap and an Aluminum Wrap. Freeze for 3-4 hours.
Scoop out ice cream and serve. Garnish with some more white chocolate chips on top.
