In a shallow plate combine flour, salt and pepper. Mix well and keep aside.
In a medium-sized mixing bowl combine Egg and coconut milk. Whisk until it is smooth. Keep aside.
In another shallow combine Panko breadcrumbs and shredded coconut.
Dredge shrimp in Flour, then eggs, and finally in the panko coconut mixture. Press lightly to adhere. Flip over and coat both sides. It is better if you have lots of coconut on one shrimp. Set aside on a plate. Repeat until all shrimps are evenly coated.
Place these shrimps in your air fryer basket. Do not overcrowd. leave at least ½ inch gap between each shrimp. Air fry at 400 degrees F or 200 degrees C for 8-minutes. Flip over at 8-minute mark and air fry for another 4-minutes.
Serve right away with Thai Sweet chili sauce or Pineapple chili sauce.

Panko Breadcrumbs - Panko is made from crustless bread and therefore stays crispy for a long time compared to regular breadcrumbs.
Spray Oil - I like to pour my olive oil.Avocado Oil into old glass spray bottles. Do not use Non-stick cooking spray in the air fryer basket as it will damage the Teflon coating.
Overcrowd - Make sure you leave some gap between each shrimp so that the "air" can flow and fry your shrimps.
Shake off excess - While dredging shrimps in the mixture make sure you shake off any excess.
flip - You can flip at the 8-minute mark and cook the other side for another 3-4 minutes.
Storage Instructions
Air-fried Coconut Shrimps freezes well for up to 2-months. But make sure you keep them in a ziplock bag or an air-tight container. You can reheat them in the oven for 10-minutes at 350 degrees F or 180 degrees C.
