INSTRUCTIONS
Chop Chicken thighs into 1-inch pieces. Dice the Bell Peppers and Red Onions. Soak Bamboo skewers in cold water for 20-30 min
Season the chopped Chicken pieces with salt, pepper, garlic powder and cayenne pepper. Cover and refrigerate for 1 hour or 8 hours (if possible)
Knead the Skewers. Start with Onion, followed by Chicken and then a piece of Diced bell pepper. Repeat until you reach the edge of the skewer.
Heat an outdoor grill or indoor grill to 400F or heat a Grill Pan. As it gets hot, place the skewers in it and Grill for 5-7 minutes or until there are charred marks on the chicken and veggies. Baste with Buffalo sauce midways.
Drizzle some more Buffalo sauce on top and serve immediately.

These Grilled Buffalo Chicken Skewers are extremely versatile. You can use any Veggies or Squash you have at home.
You can grill these in the outdoor grill or in an indoor grill or in the grill pan or in the oven.
Do not forget to soak the bamboo skewers in cold water. Soaking the skewers will moisten them and prevent them from getting burnt in the hot grill.
You can use Chicken Thigh or Chicken breasts pieces, it's totally up to you.
You can always change the veggie combination and use any veggies you love to grill with the Chicken. In fact, this is the best part about these Grilled Chicken Skewers. They can be easily altered as per your personal preferences.
You can substitute Bell Peppers with Cherry Tomatoes, Summer Squash, Zucchini, Mushrooms, Potatoes, or Asparagus.
Drizzle some ranch on top before serving.
