Instant Pot Shredded Hawaiian Chicken Tacos are sweet and sour chiken Tacos. Hawaiian Pineapple Chicken Tacos cook really fast in the Instant Pot and are a perfect quick & easy Summer dinner recipe.
Cook the Chicken along with Pineapple Chunks, chopped Onion, minced Garlic, chopped Jalapenos and other spices in the Instant Pot. Add some water and pressure cook on high for 10 minutes. After it gets cooked, do a quick pressure release and then empty the content of the pot into a sheet pan.
Shred the Chicken using two forks. Toss to combine everything.
Put the Sheet Pan in the oven at broil mode for 10 minutes. Toss midways after 5 minutes. The Chicken will crisp up in the oven.
Toast Tortillas on the stove top until pliable. Serve this Pineapple Chicken filling in Tacos. You can add your favoruite crunchy slaw if you like. Garnish with some chopped Cilantro and Lime juice and enjoy!

Can I use canned Pineapple?
Yes of course! You can use Canned Pineapple in place of fresh Pineapple for this recipe. However, since Canned Pineapple is soaked in Pineapple juice and sugar syrup it tends to be a little bit sweet. So you need to adjust the spices accordingly.
Other Substitutions Possible
You can use Corn Tortilla in place of Flour Tortilla. They are crispy and crunchy and tastes really good with these Instant Pot Shredded Hawaiian Chicken Tacos.
You can add some White Vinegar and Organic Ketchup along with other spices and sauces while cooking the Chicken. Ketchup really enhances the taste of Shredded Hawaiian Chicken Tacos, bringing out the sweet and sour flavor more!
If you like it spicy, then add some more Chili Powder and Cayenne Pepper while cooking the Chicken.
