Instant Pot Southern Peach Cobbler is a classic summer dessert recipe made in the Instant Pot. Its just as good and delicious. Also gets ready in just 10 minutes.
4medium sizedPeachesskinned and chopped into thin slices
1cupLight Brown Sugar
1teaspoonGround Cinnamom
½cupCornstarch
1teaspoonPure Vanilla Extract
1tablespoonLemon Juice
1pinchKosher Salt
Biscuit Topping
1cupAP Flour
1teaspoonBaking Soda
1teaspoonBaking Powder
2sticksCold Unsalted Buttercubed
1pinchKosher Salt
¼cupGranulated Sugar
2tablespoonSour Creamor Thick Greek Yogurt
1scoopIce Cream or Whipped Creamto serve

INSTRUCTIONS
Skin the Peaches and chop them into thin slices. Place them in a bowl. Add Brown Sugar, Vanilla Extract, Lemon Juice, Cornstarch and Ground Cinnamon. Toss to combine.
In a mixing bowl, combine, Flour with Baking Soda, Baking Powder, Salt, Granulated Sugar and Cold butter cubes. Combine with your hands until the flour gets coarse and resembles a bread-crumb like mixture. Add some Sour Cream and mix with the dry ingredients. You can do this entire step in the food-processor as well.
Grease a 8 inch cake pan with cooking spray. Pour the Peach Filling in it. Top with dollops of the biscuit topping. Donot spread it out. Cover with an aluminium foil. Fill the Instant Pot with some water, place the trivet and then place the wrapped cake pan over it. Cover the lid and allow it to cook on high pressure for 10-12 minutes. After it gets cooked, allow the steam to release naturally for 5-minutes and then quick release.
Remove the foil and get the Cake pan out of the Instant Pot and place in the oven at broil mode. Broil for 2-4 minutes or until the top of the cobbler gets nice and golden-brown. Then take it out in a bowl and serve with a scoop of Vanilla Ice Cream or Whipped Cream. Enjoy!
