Keto Buffalo Chicken Casserole with Cauliflower is a healthy and low-carb buffalo chicken casserole recipe that is made with cauliflower. This easy and delicious casserole makes for a perfect keto recipe for dinner. This is also a whole30 and Paleo recipe for dinner
Chop the cauliflower head into small bite-sized florets. Bring a pot of water to boil and add the chopped Cauliflower. Allow it to boil over medium-low heat for 5 minutes. After the Cauliflower tenderizes, take them off the pot, drain the water and rinse the Cauliflower with tap water. Keep it aside. Preheat the oven to 350F or 180C.
Heat some Extra Virgin Olive Oil in a Pan. As the oil shimmers, add the chopped Onion and minced Garlic. Saute the Onion and Garlic until they get fragrant for about 2 minutes.Next, add the Cream Cheese, 1 cup of shredded Cheddar Cheese, Monterrey Jack Cheese, Chicken, Hot Sauce, Heavy Cream, Salt & Pepper. Toss to combine everything
Add the Cauliflower to this mixture. Toss to combine everything. Transfer to a casserole baking dish. Top with remaining Cheddar Cheese. Bake at 350F or 180C for 15 -20 minutes.
Garnish with chopped Cilantro, more Hot Sauce, and Ranch Dressing. Serve hot

You can use Blue Cheese dressing instead of Ranch
To make this even spicier, include some roasted red pepper flakes or more hot sauce in the recipe.
You can replace Heavy Cream with Coconut Cream for even better flavors.
