Stuffing
500gCauliflower Headfinely grated
2SmallGreen Chilies
1MediumOnionfinely chopped
1tablespoonGinger Juliennes
3ClovesGarlicminced
1tablespoonCilantrofinely chopped
½teaspoonRed Chili Powder
½teaspoonCumin Powder
½teaspoonCoriander Powder
½teaspoonDry Mango Powder
¼teaspoonTurmeric Powder

INSTRUCTIONS
Make a soft dough with AP Flour, Water, Some Oil and a Pinch of Salt.
Allow the dough to rest for 10 minutes at room temperature. Cut the cauliflower in half. Soak it in warm water for a few minutes. Cut the cauliflower into small sized chunks. Over the pan, pour some oil and fry your cauliflower florets along with finely chopped onions, green chilies, ginger juliennes, chopped garlic, and cilantro or coriander. Throw in spices - red chili powder, cumin powder, turmeric powder, coriander powder, and Dry mango powder - into the mix.Stir it lightly and let it chill for few minutes.
To Make the Parathas
Roll out your dough into small circles. Make a bowl kind of thing with the dough using your palm.
Throw in some filling into it.
Twist the head of the of the bread bowl and seal it.
Now, roll out this stuffed bread.
Don't be intimidated if you see them breaking from the sides.
Allow them to get cooked over a non-stick pan for some time. Turn it over and cook the other side of the bread. Keep the flame at medium. Now take a spoon of refined oil or ghee and pour it over the bread. Make sure it doesn't burn. So, spread the oil evenly over the bread.
Now, twist it over and do the same with this side as well.
Once you see browning or a golden crust at some places it's time to get them down from the stove. Serve it with a bowl of curd or tomato sauce.
