INSTRUCTIONS
Soak black-eyed peas overnight. Or in case you forget, make a bowl of boiling water and soak your black-eyed peas in that water for at least 2-3 hours. After 2-3 hours, strain the water, and rinse thoroughly.
In a large heavy saute pan, saute chopped onions and minced garlic on medium-low heat until the onions are partially brown on the sides.
Now add your black-eyed peas, roughly chopped tomato, tomato paste, and vegetable broth. Stir lightly and let it come to a slow boil over medium-low heat for 2-3 minutes.
Now add salt and freshly cracked black pepper as per your taste. Also add ground cumin, cayenne pepper, and some sugar. Stir well. Now add chopped celery and Cover cook on low heat for 5-7 minutes.
If it turns too dry adjust with a little water or stock. The texture of black-eyed beans should be thick but not dry nor watery.Taste the seasoning and adjust as per your taste. Garnish with freshly chopped cilantro, and serve right away.
