INSTRUCTIONS
In a Microwave safe dish melt semi-sweet chocolate baking bar at an increment of 30-seconds or until completely smooth. Add some Pure Peppermint extract and Mix well. (Read Instructions for melting chocolate in Stovetop in the blog post)Pour it into a baking sheet lined with Parchment Paper. Use an Offset Spatula to evenly spread it out. Place the baking sheet in the freezer for 15-minutes or refrigerate for 30-minutes.
Melt White Chocolate in an oven at a 30-second increment. Keep stirring after every 30-second until it's smooth and silky. White chocolate is too temperamental. So, do not overdo it or it may turn brown.
Once the white chocolate has melted, pour it into the baking dish on your semi-sweet chocolate. Immediately top with crushed or broken candy canes. Place it in the freezer for 15-minutes or in the refrigerator for 30-minutes or until completely set.While serving break your Peppermint bark using the flat side of a meat tenderizing hammer.

Storage Instructions for Peppermint Bark candy
Store this in an airtight container and keep it in a cool and dry place. Ideally, you should keep it at a temperature less than 70°F
You do not need to store them in the refrigerator. You can keep them on the countertop sealed in an airtight container for several weeks.
In case if you want to store them for a longer period (7-8 months) then you can wrap each bite-sized piece with wax paper or a parchment paper or plastic wrap. Then keep them in an air-tight container. Now you can freeze them without a shadow of a doubt.
When thawing makes sure you do not open the plastic wrap or else there will be condensation on the bark.
How to Melt Chocolate on the Stovetop?
Take a large pot and fill it with 3" water over medium heat. Bring the water to a simmer. Now bring down the heat to low and place a large heatproof glass bowl on the pot. Place semi-sweet chocolate baking bar (for the first step) and then White Chocolate Bar (for the second step).
