Peach Cream Cheese Hand Pies - A classic summer breakfast recipe that people love. Its so fresh and so peachy. Makes for an excellent after dinner recipe.
In a large bowl, mix flour, sugar, cold butter cubes with a pastry cutter until it gets a bread-crumb like mealy consistency. You can do the same thing in a food processor as well. Take 1 tablespoon of ice-cold water and dry to bring everything together. Do not overwork the dough. Do not add too much water. Add just enough water to get everything together. Cover the dough and keep it in the freezer for 30-minutes or in the refrigerator for 2 hours or overnight.
Chop Fresh Peaches into "C" Shaped halves and keep them in a medium-sized bowl. Add granulated sugar, grated nutmeg, and ground cinnamon. Mix everything well and keep aside.
Once the dough has cooled down, use a cookie cutter or a glass to cut out circles. Take one teaspoon of cream cheese and smear it all over the circular dough. Spoon 1 tablespoon of peach pie filling over that. Seal it with another circular dough smeared with cream cheese. Use a fork to make patterns on the sides and prick some holes on the top.
Brush milk on these hand pies and sprinkle coarse sugar onto them. Put them in the freezer for 20-minutes.
Now, bake them at 350F or 180C for 30-minutes or until the sides are lightly golden brown. Enjoy them while they are warm with a little ice cream on top.
