Grate the Zucchini and take it all up in a colander. Mix with some salt and keep aside for 10 minutes.After 10 minutes, take it all up in a Parchment Paper or Clean Kitchen Towel and squeeze out the excess water.
Add the Grated White Cheddar Cheese, Grated Parmesan Cheese, and Cream Cheese to it. Also, throw in the crushed Garlic along with some freshly grounded Black Pepper. Mix everything well until combined.
Heat Olive Oil in a Pan or skillet and once the oil is smoking hot, reduce the flame to simmer and use a ladle to pour the fritter batter into the hot oil.Once it starts to get brown from the sides, flip it carefully, and fry both sides until it turns golden brown from both sides.
Serve your Flourless Zucchini Fritters with some Cream Cheese and a sauce of your choice.

Notes
Drain out excess water from your Zucchini by squeezing it out. If you do not drain the water out, your Fritters will turn out to be soggy and you will not be able to fry them.
You can add some Italian Seasoning to your fritters as well.
