Pineapple Upside Down Cake - Caramelized Pineapple Top with dense cake on the inside feels like an ultimate tropical dessert that can be enjoyed all year long.
Preheat the oven to 350F or 180C and grease a round cake tin with butter
In a Pan add Butter and Brown Sugar. Put it over a low flame and stir constantly for 3 minutes or until it starts to bubbleWhen it bubbles, pour it in your greased cake pan and spread it evenly at the bottom.Arrange Pineapples and Cherries at the bottom in a flower pattern or any pattern you wish to.
In a separate mixing bowl, cream softened butter and granulated sugar for 5 minutes at low spread or until it gets light and fluffy.Now beat the eggs one at a time and mix well. Also, add the Vanilla along with Pineapple Juice. Your Batter will curdle at this point. So don't worry.
Add the sifted flour, Baking Soda and Baking Powder into your wet ingredients and fol it lightly with a rubber or wooden spatula.Pour the cake batter over your Pineapple base. Even it out using an offset spatula and bake it.
Bake your Upside Down Pineapple Cake for 35 minutes or until a toothpick inserted in the center comes out clean. Allow it to cool down before you invert it on a plate. You can serve this with some Vanilla Ice Cream.
