INSTRUCTIONS
Preheat oven to 400 degrees F.
If your chicken breasts are more than 1 inch thick, lay them out on a cutting board and use a meat mallet to thin out the thickest part until it's about 3/4 inch thick.
Season chicken breasts with salt and freshly ground black pepper as per taste.
Make the marinade. Combine all the ingredients for the marinade in a bowl.
Generously rub both sides of chicken breasts with the marinade and place them on the baking dish.
Bake for 20 minutes uncovered. Use an instant-read thermometer at the thickest part of the chicken. Check if it reads 165 to 170 degrees. If not, bake for another minute and check again.
