Quinoa Lettuce Wraps are Vegan Lettuce Wraps where Quinoa tossed with veggies and a flavorful sweet and spicy Teriyaki Sauce is filled inside crisp Lettuce cups, topped with Peanuts and Lime Juice and served. Its super delicious and so healthy dinner recipe.
Combine all the ingredients for the sauce in a small bowl and set aside.
Heat Olive Oil in a skillet. Add all the chopped veggies. Saute until cooked for 4-5 min.
Cook Quinoa with salt and water, as per package directions and set aside.
Combine Quinoa with the sauteed veggies, pour some of the sauce over it (reserve some to drizzle later), and toss to combine. Saute for 2-3 min until the Quinoa gets flavorful and fragrant. Set aside.
Serve in Lettuce cups. Garnish with some toasted peanuts, chopped green onions, cilantro, Lime juice and drizzle the leftover sauce. Serve immediately!
Notes
Substitutions
Lettuce - instead of Romaine lettuce, you can use Iceburg lettuce as well.
Veggies of your choice - use any veggies you have at home. You can even use chopped frozen veggie mix for this Quinoa Lettuce Wrap recipe.
Chicken - Make it with Chicken if you do not follow a Vegetarian diet. You can use shredded rotisserie chicken or Ground Chicken for ease of use.
Almonds - If you're allergic to Peanuts replace with Almonds or Cashew Nuts or even Pepitas.
Variations
Spicy - add more of Sriracha and Red Pepper Flakes to make the sauce spicy
Peanut Butter - add some Peanut Butter in the sauce mixture to make this even more flavorful
Tofu or Tempeh - add sauteed or grilled Tofu or Tempeh along with the Quinoa for Vegan Lettuce Wraps with Tofu.
How do you store Lettuce Wraps?
Wrap them up really tightly using a plastic wrap or store in an airtight container and refrigerate for up to 2 DAYS.I do not recommend freezing Lettuce wraps as the lettuce leaves lose the crunch after defrost
