Preheat oven to 350F and line a baking tray with cooking spray.
Mix butter and brown sugar until pale, light and fluffy with a hand mixer or stand mixer. Add egg, chai spice, and vanilla essence. Mix well.
Sift rolled oatmeal, AP Flour, Baking Soda and Baking Powder and add them into the batter. Lightly fold until everything combines.
Use an ice-cream scoop to make small cookie balls and place them on the baking tray. Bake for 10-12 minutes or until the sides are lightly brown. Let them cool down before you transfer onto the cooling rack.
Notes
You can add some soaked raisins into the mix to give it more flavors
