INSTRUCTIONS
Pre-heat your oven to 220C or 420F and line a baking tray with parchment paper.
First prep the filling of the pies. Heat oil and add in Turmeric, Cumin,Cayenne Pepper, Coriander, Dry Mango Powder, Garam Masala. Saute the dried spices until fragrant for about 2-3 min over medium high heat. Add a splash of water and cook the spices for another 2-3 minutes. Add salt and pepper to it and stir well.
Add the soaked lentils to the spice mix and mix well. Cover cook over medium high heat for 5-7 minutes.
Make the Dough. First, mix wheat flour with oil and salt to make a crumbly mixture. Add water as per requirement and knead a soft dough.
Cut the dough into small halves using a sharp knife. First divide it in two. Then in four and then in eight. Now shape each ball in the form of a bowl. Make a small depression in the center.Stuff in the lentil mix. Pull out the sides and twist on top to seal it completely.Press the ball with your palm to lightly flatten it. Use a fork to poke holes on the ball. Brush oil on the Pies and but them on the baking tray.
Bake your Lentil Hand Pies for 16 minutes at 220C or 420F. Then toss them over and bake for another 7-8 minutes at the same temperature.
Notes
This recipe is inspired from Chef Ajay ChopraYou can use Puff Pastry sheets. Just use a cookie cutter and cut circles. Place the filling in one of them. And top with the other half. Crimp the edges using a fork. Brush Olive Oil on top and Bake or Air Fry. You can alternatively use Phyllo sheets. If using phyllo Sheets, thaw them overnight and then unroll, damp with a kitchen towel and then use it. Layer about 2-3 sheets with oil in between and then place the filling in between. Fold the sides and place it on a baking dish.
