diced (can use English or Persian, do not peel)

Red Onion
peeled and thinly sliced

Heirloom Tomatoes
diced (can use Roma Tomatoes or Cherry Tomatoes)

Avocados

Fresh Mint Leaves
finely chopped

Lemon
juiced

Extra Virgin Olive Oil
Salt
as per taste (can use Garlic Salt)

INSTRUCTIONS
Chop the Red Onions, Dice the Cucumbers and Tomatoes, Peel and scoop out the Avocado flesh and chop into dices. Chop the Mint Leaves
Add all the ingredients in a large mixing bowl. Drizzle Extra Virgin Olive Oil, Lemon Juice and Salt on top. Toss to combine and serve immediately.
