Szechuan Chicken is a simple chinese recipe for dinner. This easy Chicken stir fry recipe is sweet and spicy and a perfect asian weeknight dinner recipe. It is best served with steamed rice or veggies.
Coat the Chicken cubes with Eggs, Cornstarch, Salt and Pepper. Toss until combined. Heat Olive Oil in a wok or skillet. As the oil shimmers, add the Chicken and cook them until they turn golden brown on both sides. (cook the chicken in batches. Do not crowd the pan)
Once the Chicken gets cooked, remove from the skillet. Add the veggies, sichuan peppercorns, dried red chilis to the skillet and toss to combine. Cook until the veggies tenderise for about 2-3 minutes. Pour Ketchup, Szechuan Sauce, Soy Sauce, and Rice Wine Vinegar. Toss to combine. Once it comes to a slow boil, turn off the heat.
Garnish with sesame seeds and freshly chopped green onions. Serve with rice.
