Slow Cooker Lentil and Rice is a 4-ingredient, Dump and Forget, Lazy-Day dinner recipe where all you have to do is just add rice and lentils along with herbs and spices in your slow cooker and then get them cooked to perfection.
Pour olive oil in the bottom of the slow cooker. Add all other ingredients. Give it a light toss.
Close it with a glass lid and cook on low for 5-6 hours or on High for 3-4 hours.
Open the lid and garnish with freshly chopped cilantro. Serve right away.

Storage: Allow this to cool down completely and then transfer the contents to an airtight container. Refrigerate for 4-5 days. Reheat it on the stovetop simmering for about 5-minutes with few splashes of water or broth. You can freeze the leftovers for up to 3 months. Allow this to cool down completely. Transfer it to an airtight container. Freeze for 3-months. Thaw it in the refrigerator overnight or on the counter for 5 hours before serving.
