Apple Butternut Squash Chicken in Crockpot is an easy and flavorful Fall Crockpot recipe for dinner. Its flavorful, hearty and so comforting. Butternut Squash and Chicken Breasts with Apples stewed in the Crockpot with warm fall spices, ginger and sage is so delicious almost like Apple Butter Chicken!
½inchGingergrated (or use 1/2 teaspoon Ginger Powder)

INSTRUCTIONS
Season both sides of the Chicken Breasts with Smoked Paprika, Salt & Pepper. Heat Olive Oil in a Skillet. Add the Chicken Breasts, skin side down, and sear until golden brown on both sides. Once they are golden brown remove them from the heat and keep them aside.
Add Butternut Squash in the Crockpot. Now, pour the Cider Vinegar, Yellow Mustard, Maple Syrup, Soy Sauce, Sriracha, Grated Ginger, Smoked Paprika, Salt, Pepper, and Dried Thyme. Toss to combine everything. Add the Chicken Breasts over it and pour the remaining oil used in searing the Chicken. Also, pour Browned Butter over the Chicken. Top with apple slices. Cover with the lid and slow cook on low for 4 hours or on high for 2 hours.
Garnish with fresh Sage Leaves and serve

To make Browned Butter, just melt butter in a skillet and use a whisk to stir continuously. As the butter melts, it will get frothy, and after that its color is going to change to brown and you'll start getting a nutty aroma. That's your Browned Butter, which you should use to top over the Chicken, before slow cooking. I always recommend making the Browned butter in a light-colored pan so that you can see the change of colors distinctly.
