Cut the Zucchini peel on into thin strips. First slice the Zucchini into halves. And now, cut each half into thin lengthwise strips. Toss them with Flour and keep them aside.
Beat eggs until combined in a bowl.
Combine Grated Parmesan Cheese with Panko Breadcrumbs, Cayenne Pepper, Italian Seasoning, Salt & Pepper. Toss until combined.
Dip the Zucchini strips in the egg mixture and then again in the panko mixture. Shake and dust off the excess.
Brush olive oil over the Zucchini strips. Air Fry @350F (180C) for 10 minutes. Or, Place in a greased baking dish and bake @450F (220C) for 20 minutes.

Healthy Breading option: For a healthy and low carb breading go for Almond flour instead of Panko Breadcrumbs. It's going to work perfectly fine and since it's so light it will make your Zucchini fries extra crispy.Bake: You can Bake these Zucchini fries. Place them in a greased baking dish and bake @ 450F (220C) for 20-25 minutes.Seasoning: You can change the Seasoning as per your choice. You can replace Italian seasoning with any other seasoning you love. If you love it a little spicy try this with Cajun seasoning or Taco Seasoning!
