INSTRUCTIONS
Cut cauliflower into florets. Pulse in a food processor to make cauliflower rice. If you are using store-bought Cauliflower rice then skip this step.
Heat Olive Oil in a pan. As the oil shimmers, add chopped jalapeños, canned Diced Tomatoes, Tomato Paste, Frozen Corn, and Spices - Smoked Paprika, Ground Cumin. Season with Salt and Pepper as per taste. Cook over low heat until the tomatoes get cooked.
Add Cauliflower Rice. Toss until combined.
Garnish with Chopped Cilantro, Sliced Avocados, and Lemon Juice. Serve hot.
