Buffalo Chickpea Quesadillas with Mexican Cheese Sauce
Buffalo Chickpea Quesadillas with Mexican Cheese Sauce is an easy and healthy weeknight dinner recipe that's sure to please everyone in the family. It's a healthy, cheap, and easy dinner that gets ready in just 30 minutes.
Heat butter and olive oil in a pan. As the butter melts, add the chopped onions and minced garlic. Cook them over low heat for 2-3 minutes.
Now, add the hot sauce, onion powder, garlic powder, cayenne pepper, brown sugar, salt & pepper along with the canned chickpeas. Toss to combine. Cook for 5 minutes on low heat, mashing the Chickpeas as you cook through.
To make cheese sauce, add all the ingredients in a pan. Cook over low heat for 5 minutes. Once the sauce thickens, take it out in a separate bowl.
In a flour tortilla, spread the Cheese sauce. Spoon the Chickpea filling in the center. Fold it in half. Either toast it on the stovetop or bake it in the oven at 425F or 230C for 8 -10 minutes.
Serve with chopped cilantro and leftover cheese sauce.
