Cheese: You can replace Cheddar Cheese with Monterey Jack or Pepper Jack Cheese or Colby Jack Cheese. You can also make it more Mexican by adding Shredded Mexican Cotija Cheese.
Bring in More Heat: You can add more Heat to the Quesadillas. Just add some Chipotle Peppers in Adobo sauce and it will make it spicier. Or else just add 1 tablespoon of Chipotle hot Sauce while making the White Bean Spinach mixture,
Salsa - If you don't have salsa don't fret it. Just use Enchilada Sauce in its place and you'll be good to go.
Don't Like Spinach - No issues, you can replace spinach with a can of diced green chilies. Different texture but a good alternative.
