Sheet Pan Shrimp Fajitas is a quick and easy dinner recipe that can be made in less than 20-minutes. If you are looking for an easy weeknight meal with few ingredients then this is it.
1Medium-sizedYellow Bell Peppercut into thin slices
1Medium-sizedRed Bell Peppercut into thin slices
1Medium-sizedGreen Bell Peppercut into thin slices
2TablespoonExtra Virgin Olive Oil
Salt and Pepperas per taste
1TablespoonSmoked Paprika
½TeaspoonGround Cumin
½TeaspoonOnion Powder
½TeaspoonGarlic Powder
Lime
Freshly chopped cilantro
Warm Tortillas

INSTRUCTIONS
Preheat oven to 450°F or 230°C. Grease a sheet pan with non-stick cooking spray.
In a large mixing bowl combine onions, bell peppers, shrimps, Olive Oil, Smoked Paprika, Ground Cumin, Onion Powder, Garlic Powder, Salt, and Black Pepper. Toss well to combine.
Spread this in your prepared baking dish. Bake this in a preheated oven at 450 degrees for 8-10 minutes. Next, turn your oven to broil mode and cook for an additional 3-5 minutes or until you see charr marks on shrimps.
Squeeze lime juice on your sizzling shrimp fajitas. Garnish with freshly chopped cilantro and serve with some warm tortillas.

If using frozen shrimp, make sure you thaw it out.
Make sure you peel the outer layer and devein your shrimp before using it.
Cut veggies thinly for even cooking. Or else your veggies will be undercooked and your shrimp will get chewy.
You can replace all the spices with just Taco Seasoning, Salt and Pepper.
You can prepare the shrimp with veggies in the morning and bake it in the evening. Make sure you keep them in the fridge after covering them with plastic wrap.
If you want, you can serve them with some fresh slices of Avocado.
