INSTRUCTIONS
In a bowl mix shredded coconut with coconut milk with melted butter. It should not be too runny. It should come together in the form of a ball. (Save some shredded coconut for garnish on top)Place them on a baking sheet lined with parchment paper. Keep them in the freezer for 10-minutes or in the refrigerator for 30-minutes.
In the meantime melt dark chocolate wafers or dark chocolate baking bar (either in an oven at 30-seconds increment or on the stovetop). Read instructions for melting chocolate like a pro in the blog post. Allow chocolate to come down to room temperature. Use an off-set spatula to take out coconut balls from the baking sheet. Place one ball on a fork. Dip the ball in melted dark chocolate. Coat it completely. Tap the fork on the edge of the plate so that excess chocolate drips off and place them back on the baking sheet. Repeat this with all of your coconut balls. Freeze them uncovered for 10-minutes or refrigerate for 30-minutes. Enjoy with some shredded coconut on top.

Instead of coconut milk, you can also use coconut oil to make the balls.
If you prefer sweet coconut balls you can add some honey or maple syrup while making the balls.
