Shahi Tukda is a delicious Indian dessert recipe that is made with bread, which is fried with ghee, soaked in sugar syrup, and topped with Rabri and chopped Nuts.
To make the Rabri, take milk in a heavy bottom pan. Allow the milk to come to a boil over low flame. Keep stirring at regular intervals. Allow the milk to reduce to half the quantity. This will take time, so meanwhile, you can prep the rest of the recipe. Once the Milk has reduced, add the Sugar, Cardamom Powder, and Saffron Strands. Mix and take it off the heat and keep in a separate bowl.
Take 1 cup water in a bowl. Add 1/2 cup sugar. Allow this to come to a slow boil over low flame. As the Sugar will melt, the sugar syrup will be ready. This will reach to a stringy consistency.
Cut the Bread into triangles. Remove the edges. Fry the Bread triangles with ghee in a frying pan or tawa. You can also do this step in the microwave.
Dip the Fried Bread in the sugar syrup. Soak the Bread in the sugar syrup and then serve.Garnish with the Rabri and chopped Nuts. Enjoy!
